Which do you think Itachi represents more?
Itachi as The Weasel
I think one of the biggest things backing up Itachi's resemblance to the weasel is his own name. This is the product of my research:

Anyways, the weasel is commonly known as an animal of bad luck. A liar, and a trickster are also used to describe it at times. During his early years, Sasuke saw Itachi as a symbol of greatness and wanted to be just like him. A perfect role model. When the young Sasuke witnessed the death of his parents by the same brotherly figure... Itachi's true characteristics seemed to show their roots to him. Itachi constantly painted an illusion in Sasuke's head, and later Kabuto pointed out Itachi's lying nature. It's easy to see where Itachi's actions in the manga corroborate not only his name but also the same characteristics of the weasel in tradition.
Itachi as The Crow
While Itachi can definitely be compared to a weasel, some things lead us to believe that the crow is actually his true nature (although they are pretty similar). Our first piece of evidence would have to be Sasuke's speech when he was double-crossing Orochimaru. In his example, Sasuke labeled himself as a baby "Uchiha chick" (bird offspring) that Orochimaru (the snake) was trying to raise for his own benefit. He also mentions that the reason he was after the weakling of the two was because his attempts failed on the true bird of prey.. which is where Itachi comes into play. Seeing how Sasuke recently compared himself to a hawk and Madara's Susano'o took the form of a Tengu (supernatural mythical creatures with bird-like characteristics), it's not far fetched to say that the Uchiha as a whole represent them.
So then the next question would be.. why single out the crow out of all the other types of birds? As many of us know, the crow can be a symbol of death in many cultures. Aiding the slaughter of an entire clan surely qualifies for that title, right? Like the weasel, the crow is also known for its deception. Almost 400 chapters were leading up to Sasuke's revenge against Itachi for the killing of the Uchiha, and in the end most of his story turned out to be a lie. Kishimoto probably had the same thought in mind, since Itachi's summoning contract is with the crows apparently. Kidomaru had a spider contract, similar to Sasuke's hawk, Kisame's sharks.. and you get the idea.
They're actually pretty similar if you think about it, since they're both known for their lying aspects. The weasel part is even in Itachi's name, but the crow as a whole represents the Uchiha more, and the death that occurred because of the massacre. Which do you think Itachi is more like?
