Is Rin the first medical ninja Jiinjuriki?

Why would the hidden mist village choose a medical ninja to become the jinjuriki, and how is she able to contain it as she was pretty weak? Also, why would the hidden mist allow Rin to be aware that she has a tailed beast inside her and jeopardise their plan. It all seems pretty stupid to me.

They knew she was weak, that was the plan. They put it inside her, her team rescues her and returns her to the village. After that the tailed beast would then escape because she was weak, thus attacking the village as planned. Sounds pretty simple to understand.

from the looks of things and patterns, I have reasons to believe Mito Uzumaki(hashirama's wife) was a medical ninja as well.

Well she is a medical ninja, her main priority is not strength and to be fair genin/chuunin vs a group of mist chunin/jonin/anbu isnt a fair match

Anyway they were planing on her not being able to contain the beast because up until that point only two have.
If you read the chapter they point this out.
Even rin knew she was a goner when she straight out says she was merely a pawn now.

That was the point. She was never meant to contain it. If you were planning on opening a container some time in the near future, would you tighten it to the point that you couldn't open it again?

They chose Rin because they knew she was valuable and that people (Kakashi, Minato etc.) would come to rescue her. It was all part of the plan.

You don't think Rin would notice an entire Bijuu being sealed into her? It was different with Naruto since he was a baby and could not remember. But how could a full-fledged shinobi not notice a tailed beast with enormous chakra being sealed into them?

As far as your question goes about Rin being the first medical-ninja Jinchuuriki...I think that would be Mito, considering she has the same forehead marking that Tsunade has and she is Tsunade's grandmother, after all.
