I remember him saying in a interview that he didn't know how to defeat Madara.

Looks like he has figured out how to do that with Kaguya's return. With that being said,

Naruto and Sasuke couldn't stop Madara because he was too strong.

So how are we suppose to believe that they can beat Kaguya? Assuming she is stronger.

Kishimoto has already written the entire story most likely, just not the final version we are reading. Every writer has drafts. He doesn't draw up the chapter every week on a whim. He even stated from the beginning he had the ending already planned from the start. Leading up to it is the tricky part.
