I mean catching up with One Piece because last time I checked it was 600+ chapters. It seems interesting enough but I have only read the first volume. So, what do you think I should do and why?

If you like OP you should read it, if you do not like OP than you should not read it.

It seems you're concerned over the time it would take to read that many chapters? If so, I'd say you're better off reading it, and not watching it, cause it would take far less time. If the time is even what you're talking about?

I just don't want to read say 400 chapters and find out it's boring. That's what I'm worried about.

Personally I like Naruto more than One Piece. But One Piece is also very nice.
If you can keep patience while reading One Piece then you may opt to go for it. [because the story progresses slower in One Piece compared to Naruto. Thats what I feel]
