Actually now that I read OP I think it might be something else....

Itachi used Susanoo only a little bit and was basically blind using it(he probably used it just a little bit before when he got Yata and Totsuka)

So I think the thing that affects the MS/eyes most is Susanoo because Amatarasu and Tsukuyomi are needed to get susanoo....and Sasuke freaken spammed Susanoo for days so what I think is

Ammount of Time using Susanoo(used for a long time like 10min or so....) = Ammount of time actually shooting off Amatarasu or Tsukuyomi(these two techs are only used for a few seconds at a time...)

^ that being said using susanoo would be much much worse than the other two techs

so thats why Sasuke lost eyesight in like a month...

yeah he spammed it but look at the situations he's been in lol
I doubt Itachi was ever in any life-death battles that ACTUALLY wore him out enough for him to spam MS.
in other words, Sasuke isn't weak but yet he is against the opponents he's fought (Bee for example) and needs to spam MS.
Itachi was older and stronger. Itachi probably wasn't in that many (or any at all) battles during his teens and used MS abilities.

That's the thing, sasuke was arrogant and spammed his MS, he also put himself into situations where he needed to fight for survival - he didn't need to go to the kage summit but he did anyway and it resulted in him fighting the kages, danzo + kakashi, sakura and naruto and spamming his MS, itachi was smart with MS, sasuke was not

What Itachi did over the years... Sasuke did in one day - he spammed his MS techs.

this is what happens when you are too naive and you have the powers
it is almost of no use if you dont know how to use them

It just proves that itachi > Sasuke. Itachi didn't need to spam his MS to beat powerful foes. Sasuke should have been dead after fighting Killer Bee, no thanks to his team mates.

Sasuke was put into a situation where he doesnt really know how to use his new power, and Is forced to fight countless opponents all of which outclass him in most areas. This being the case, he has no choice but to "spam" MS techs everytime he has his back to the wall (which is all the time in this case) when fighting solo against Bee, or later against Ay, he TRIED to match them with his taijutsu+Chidori variants and such, but soon discovered that this was suicide. Sasuke, with his peachy, newborn MS, was forced to use the eyes SO MUCH over the course of a few days that his eyes were damaged as much as Itachi's were over the course of 6-7 years.

It's not Sasuke's fault for using them so much, but It proves that Itachi is able to handle himself around strong opponents without relying on MS while Sasuke is not

you said sasuke was 'put into' these situations...now other than plot...
If sasuke hadnt gone to the kage summit - he would have saved himself so much trouble - he put himself into those situations and should have suffered for them - he was stupid to overuse his MS
