Absolutely not, Itachi would wreck. He's easily in the top 3 smartest ninja in the manga, he wouldn't be taken down by a mere summon spammer. Nearly all of the animal paths summons attacks are straight forward, and easily avoidable by someone as fast/skilled as Itachi(plus he has the sharigan perception). Besides, Itachi would easily take out the summoner to end the summons(instead of trying to fight all the summons at once). That chameleon summon and its camouflage ability would have no effect against a master sharingan user who can see chakra, so the animal path wouldnt be able to hide at all. Plus Itachi's susanoo + Yata mirror/sword would dominate. The replicating dog summon was already shown to be easily beatable by amaterasu as well. Itachi also easily showcased his shuriken skills to obstruct the summons shared vision via rinnegan. Itachi takes this low-mid diff...animal path is a gimmicky fighter, that just summons, itachi is a top class uchiha genius that easily out-classes/out-skills this path. I'm a Naruto fanboy obviously, but to say that Itachi would easily get defeated by this path is absurd, I don't think Itachi is the "solo king" that can defeat everybody, but this path would honestly not be that much of a problem for him(already stated the manga facts above as to why). Alright the end.

possibly, chameleon cant be found out by itachi, animal path can hide inside it and keep summoning monsters, the only way to get rid of them would be to use amaterasu or use susanoo, blinding them with kunais will not work since they can avoid it or even if they get hit they can still fight since animal path will be controlling them while being invisible

1) it may not be easy to blind the summons if nagato is in control all the time, kabuto paid no attention to itachi and itachi seized this opportunity

2) the summons can still fight even after getting blinded

Animal Path's summons, and Animal Path himself, lack the reflex feats to keep up with Itachi's hand-speed and shunshin.

And there's nothing to suggest they'd even survive his fire releases.

People are kidding themselves if they think Animal Path > Base Itachi, let alone unrestricted Itachi.
