Time passes and itachi is summoned edo form by kabuto.

itachi willingly gives his edo eyes over.

would sasuke have ems? what would happen if edo tensei was canceled, would sasuke lose ems eyes while already implanted?

Itachi's edo eyes would simply fall apart & regenerate back to Itachi. Edos are made out of like a paper substance, the eyes would be paper made & will disappear before anything can even be done.
