When a jinchuriki is extracted the reason the person dies is because the chakra from the beast and their own are a separate entity, once extraction occurs the jinchuriki usually loses all of their chakra and a combination of this and low stamina = death. Sakura has the reserves but her life force isn't that extraordinary.
