I think his pick would be Neji, Shino and Sakura. First and for most, Itachi would only train Shinobi from the leaf, he was loyal until the end.

I don't think he would pick Sasuke for the simple reason that he always treated Sasuke like shit, even before he knew he had to betray him, he'd want Sasuke to rival him still.

He'd pick Sakura I think because she was said to have a high aptitude for genjutsu and lord knows it hasn't been displayed, he'd be perfect to bring out the beast in Sakura.

Neji is one of the most promising from the bunch, and Shino, I just feel like he'd be pretty bad ass under Itachi's wing. Sakura wouldn't be neglected like she was with Kakashi, she'd be dope at genjutsu and probably have some water release techs.
