If Gai is top 10 , Itachi should be up there too

Because he was a spy for Konoha who had no intention of killing anyone. Had he so easily defeated Gai there would have been no plausible reason for him to give Kisame for retreat.

All things that could defeat guy well before activating the 5th gate, let alone all 8.

The problem with that line up is they all require him to be at med/long range to pull them off. Base Guy speed is no joke.

Finger genjutsu may have been effective against genin... to trick them but all occular genjutsu requires eye contract and a hand sign.

Amaterasu might work, but if it does you can beat he is gating it up, given the speed at which it burns and the shear damage Guy can tank.
