If akatsuki didn't exist, what do you think its members would be doing instead?

Itachi joined akatsuki right after the Uchiha Massacre, which made him a criminal in the first place

Kisame would have never met Obito after killing the previous wielder of the samehada, who was also a traitor.

Sasori joined sometime after killing the 3rd kazekage, no one knew who did it

Deidara, was bombing random things and forced to join

Kakuzu was bounty hunting before he joined

Hidan was a mass-murderer

Nagato and Konan most likely joined Obito sometime before or after his fight with Hanzo which crippled him

They'd have no real place to go.. and being hunted down by their villages Anbu's.. Akatsuki gave them a way out in a powerfull organization with a partner

This is what I think:

Itachi would've lived somewhere outside Konoha, keeping an eye on the village, and Sasuke.
Kisame would've stayed in Kirigakure to protect his village as a high-ranked shinobi.
Sasori would continue his search for powerful shinobi in order to add them in his collection.
Deidara would continue his hobby, bombing random stuff.
Kakuzu would continue his bounty hunting.
Hidan would continue worshiping Jashin.
Nagato would become the leader of Amegakure after killing Hanzo.
Konan would stay with Nagato.

Some of them wouldn't have major differences.

Kisame probably would join zabuza and work for a likes of gato
Deidara i think sooner or later would became an art somewhere
