While yes Kabuto has obtained the powers of Sage mode (and has forever ruined dragons for me >_>; ) and can liquify his body. there are only so many blows he can take. Also keep in mind the fact that Itachi is for the most part busy protecting Sasuke and trying NOT to kill kabuto. his goal is to hit him with Tsukuyomi and end the edo tensei. While yes Itachi was impaled, he wouldn't have been impaled if it were a real battle that wasn't in a cave. on equal ground where itachi wouldn't be effected by his illness. he would still suffer from bleeding eyes periodically. the edo tensei lends some added perks to itachi and his crappy health. BUT we should also keep in mind that he's trying to protect sasuke as well as not kill kabuto. honestly it would make a very interesting fight, seeing as kabuto has a decent genjutsu counter. but we also have to keep in mind of itachi's amazing strategic abilities as well as his yata mirror and sword of totsuka which his susanoo has. and would end up killing kabuto. regardless of how "powerful" or "invincible" kabuto sees himself as the simple fact is. even without edo tensei it takes 1 good sword of totsuka stab and it's over (and that blade is pretty dang HUGE)

because itachi has immortality, he's kinda cocky, meaning he can take more risky attacks which may lead to his death if he were mortal
Yea Kabuto is a Sage meaning he might be past kage level
