Alright.

Edo's have unlimited chakra yes?

Why was Mu affected at all by splitting. Wouldn't it just have just been splitting his infinite chakra in half, null voiding the whole thing? Meaning he should still been able to use Jinton even after splitting.. lol

or am I missing something or don't understand the mechanics properly.

I'm not entirely sure nor do I feel like looking it up, but unlike clones that simply divide your chakra, muus fission splits physical strength in half as it's not a clone, it's pretty much another body, albeit weaker than the 2 together

Mū physically separated his body, which split half his power. That means he didn't have the control of chakra to perform Jinton, regardless if he had unlimited chakra.

I'm sure splitting his chakra in half is just cutting how much chakra he can produce. Cutting his gauge down a bit. (physical energy to produce a bigger pool of chakra).

They have the same capacity they had in their real life. That's why there's not one Edo who did a whole bunch of chakra taxing shit we know they couldn't pull off while alive (bar reworked Edo Madara). They could only preform what they were capable of in real life. Cool downs and all (shinra tensei for example). Itachi couldn't create endless Amaterasu, Muu couldn't shoot endless Jinton, and Gengetsu couldn't make endless Joki Boys.

Muu uses Jinton...
His chakra gradually regenerates and after some time...
Uses Jinton again

That's how it works.

Since when do they have unlimited chakra? Was that stated somewhere? Anyway I'm sure Kishi had his reasons, they can't be too op.

Ah, I see. This response makes the most sense to me.

Individuals like Edo Itachi aren't as powerful as I previously thought then.

Unlimited chakra restoration =/= unlimited chakra pool

Because they can't die they get their chakra restored after using it all, that's not the same as having unlimited chakra reserves which only the Shinju has

Unlimited is not the same as infinite.

Imagine a water bottle that can be refilled to its fullest immediately after someone drinks from it. It still can only hold so much at once due to it being the size of a water bottle.
