how would itachi's eye be if he was brought back again?

Well, his body had NO eyes when he was brought back the first time (since Sasuke has them), so I would say no.

IMO it would still be sealed. The eye got sealed in spite of the edo tensei's regenerative capabilities and stayed sealed. This would suggest that the sealing of his eye wasn't tied to the physical body his soul was bound to but linked to his soul itself. So even if you shove the soul in something else it would still be sealed.

If he was brought back with edo-tensei, then his eyes are just fine.

The eye of his Edo Tensei body was sealed. Just a copy, not the original eye.

That Edo Tensei body was released already and is gone, reviving him again would give him a new Edo Tensei body = 2 fresh eyes.
Rinne Tensei would give him 2 good eyes as well (he died with his eyes unlike Madara).

Well, I'm assuming his eye would work just fine as it seems to not have effect on other versions of the eye (Sasuke's eye didn't go blind when he used it). Meaning new versions of the eye will likely have sight.

That depends! If was brought back before his eyes got sealed, he would have his eyes but if it was after Good evening got sealed, he would have one eye. Just d way madara was brought to his prime
