And what about the fact that Eagles eat Snakes and that Eagles and Snakes are born enemies? ( Demonstrated and commented on by Sasuke himself ) It also may be a way to show Sasuke's abilities as a leader.

Snakes have Sage Mode,Toads have Sage Mode,Eagles apparently do not so Eagles do not have the power to attack Snakes/Dragons nor Toads,they are just plain Summons like Kakashi dogs not Highly Evolve Beings.

You can have many summoning so long as they don't contradict one a noter,such as Snakes and Toads who are sometimes at war with each other. If you had a contract with one then the other would be canceled.

How does he have two contracts?

We said it many times , Sasuke uses his right hand for Snakes and left hand for Hawks , and Jiraiya himself said ( when he was teaching Naruto the summoning technique ) that in order to summon you need to use the hand you signed the contract with
Which means that any Ninja can have 2 type of Summons.

What Sage Mode have you seen so far in the Manga? First Hokage,Toads Sage in Jiraiya and Naruto and Snake/Dragon in Orochimaru and Kabuto nothing else. Not Kakashi nor His Dogs,Not Hanzo and His Salamander, Not Tsunade nor Sakura in their Slug,Nor Sasuke with Eagles. Sage Mode has ben restricted to only a few Animals, not all. If Sasuke were to learn Sage Mode in any form,it most likely it be Snake/Dragon Sage Mode if He meets the minimum requirements.
