How do we know if the stuff in the anime isn't canon?

Okay I know that sounds like a stupid question (I didn't know what to name this post) but I was talking with some people about Naruto and apparently some of them never finished the manga and others did but are considering stuff that is non canon to the manga as canon or stuff that interfere with the manga as canon. I told them that I don't think stuff that happened only in the anime (excluding The Last(for the most part...did it have some events that interfere with the manga like the Naruto cloning thing?Correct me if I'm wrong) and Boruto) are canon.They didn't listen to me and said if Kishimoto didn't mention the anime not being canon they are going to see it as canon. I'm bored I just felt like talking about something to be honest guys.

What fillers are u talking about? If you want to talk about fillers like sora guren yota and these stuff creating imconsistencies im okay , but this recent kaguya and ashura indra arc didn't' create inconsistencies they were explained in episode 464

Dragon Ball went through this and is still going through it. The anime messed up a lot of the manga stuff and most people only know the anime. So people like me say there is manga canon and anime canon. Same for Naruto.

Nice question , but Original Manga is over so , i guess all of this is just fake.. maybe not.. maybe the story is just moving on.. but it doesnt feel Right - Maybe it does.. Also The story isnt focus on Naruto , There is New MC so manga isnt the same

If Kishi actually made this up then he is genius, but more likely he copied from some poem or phrase

that is a quote from Itachi, unless you already know that. People consider what Kishi didn't write/get involved in non-canon which I guess rules out fillers. Sometimes Kishi has incorporated fillers like Raiga, the kiba swords, and possibly the designs of Pakura and Gari.
