I read somewhere that he chose a hawk to show his evolution beyond snakes (orochimaru) as Hawks are their natural predator this is also why he renamed the team Hawk.

Tobi has been noted to also query where Sasuke got the summons from, i think its to show that no one has a tight grip on Sasuke. They may think they know what hes up to but he can still surprise people and keep secrets.

All speculations, Sasuke just summon hawk out of nowhere, same as using Blaze Release. No timeskip for Sasuke to change his summon and train for Blzae Release, Kishi needs some explaining to do here.

Dude it was established at the start of the Naruto series that Uchiha awaken their powers during battle. Sasuke awakened his sharingan in his fight against Haku, Awakened third tamoe vs Kyubified Naruto at the valley of the end, Awakened Susano'o and blaze release against A, since the beginning this has been the them for the sharingan.

For hawks? they were probably his thing from the beginning, but Since he had a snake teacher, he made a contract with them....

Blaze release he unlocked in the heat of the battle.. He was fighting for his life and had to do something about it to prevent from getting killed by A, so with his eyes he moved amaterasu.. It's just part of his skill in ninjutsu and his talent...
