Honestly a serious question. I was trying to relate this to Madara being able to live after being split in half. Obito has Kamui'd parts of his head and his heart and organs away from his body. How can he live?

Actually I think its because, its time-space jutsu. So in a sense his body is still all intact, its just in a different time zone... no idk thats too confusing

Plot demanded it.
Besides theres plenty of stuff left to the imagination in this manga, plenty that has lots of specifics left untold.

Like someone already state. He's simply existing in another dimension, not separating his organs and limbs from his body.

Essentially plot, but if we looked at it in a deeper sense, Obito's body is still connected to the normal world in a way. The physical part of his head is in the other dimension, but part of him is still in the normal world, that's why you can still see him. Basically, his head's existing in another plane, but it's still connected to his body.
