How can Itachi beat up Kakuzu?

if kakuzu releases all of his hearts it'll be a trouble for itachi.
but as long as he keeps killing the real body hearts alone won't do any good

amaterasu finishes the job. it won't just destroy the heart and then go off.
it'll burn his entire body. even if he lets go of hearts. they won't do any good if they don't have a body to go back to
