And why can't old hiruzen, the only Hiruzen we have seen, not have 4 shadow clones? What edo has increased his chakra reserves or something?

Edo's don't increase reserves but, but there isn't a limit to how many shadow clones anyone can make. But the constant chakra regen rectifies the only problem with making shadow clones. Running out of chakra to quickly.
