All he used in canon and while an Edo and all elemental ninjutsu created by Konoha shinobi before he died. So no Rasenshuriken (created after he died), no 8 gates (taijutsu), no FTG (fuuinjutsu), no gente Fist (clan technique), etc...

Except that Gai practiced it while fighting Kakashi, Hiruzen has never needed to fight any Uchiha from what we know (Obito and Madara excluded), therefore there's no reason to believe he can do that to any level near Gai's.

Hiruzen's teammate was an Uchiha. Its very likely they trained together.
