"professor" meaning that he was very knowledgeable of many jutsu...not every jutsu

Forbidden Jutsu is only known by the creator, traitors, and criminals.

When Naruto learned multi shadow clone jutsu, he was being manipulated by a traitor into stealing a scroll.

Edo can only be stopped by the user. Hiruzen could have known the Justu but never used it
