I'm going with Sakura if she has her medical equipment, and Hinata if she doesn't.
The fight would most likely be a parallel to Kabuto vs Tsunade at first. Sakura would drive her back, but not necessarily hit her due to Hinata's own agile movement. Hinata will know that it's vital not to get hit in this match, as she can see the condensed chakra going into Sakura's limbs right before she attacks using her Byakugan. If Hinata somehow screws up or if Sakura tries knocking her off balance to go for the kill, Air Palm would be her much needed safety net (it should save her at least once imo) - it's probably the only attack in this fight that's not short range, if medical equipment is taken out of the equation of course.
It won't be long before Hinata will be forced to take the offensive position. As a Hyuuga, she specializes in close quarter combat, so it's perfectly IC for her to do so. Knowing that she's basically fighting the Naruto version of the Hulk, she will not screw around in close quarters. The idea is to get in, hit her quickly, and get out before things get ugly. Under normal circumstances, I wouldn't think she could do it with plain gentle fist, especially due to healing. However, she has shown Twin Lions Fist in the manga, which are like huge boxing gloves that should do MAJOR damage IIRC. Even though Sakura is trained to dodge, the only way I see her dodging is by retreating, as she doesn't have the taijutsu (as far as skill goes) to keep evading punches at that size. This is most likely where it will end if all things go well for Hinata.
If she does have her medical weapons though, I'd willingly switch my position. She has sleeper bombs, poisoned kunai, and all the other useful jazz to aid her. Sakura has been complimented on her ability to plant her sleep bombs before, and that indicates that she's pretty good at doing so, if she can use it on other members of the K11. I'll save my other points for cross-examination if there is one.
