Can't be a great character with a single dimention.
Being hot is not related to characterization; and it is a subjective matter.
Being nice makes her a good "person"; not a good "character".
"Smart" is the same; even though i would not say she is smart.
Power is not related to characterization; though i would not say she is particularly skilled or that strong of a ninja.

Anyway, not a big fan of Hinata but hey, she's better than Sakura I guess. There are lots of cool female characters in the NV as much as Kishi sucks at females. Tsunade is fantastic and Kurotsuchi and Ino are two of my favourites.

She's gotten over Sasuke. She realised it was just a girly childish crush, there wasn't any real depth to her love for Sasuke, just passion, so although she probably still thinks he's attractive she got over him probably within the 3 years he was gone, definitely when they got told Sasuke was a wanted criminal.
