How does Hidan deal with White Zetsu? The latter has no blood so the ritual is useless, and being composed of Hashirama's cells, he posseses Saisei Nōryoku so normal wounding is futile.

Well, the databook does say White Zetsu could quickly devour humans and strengthen his own chakra in the process. Omnomnom no Jutsu.

If you meant the White Zetsu foot soldiers from the War, Hidan soloes like 50 of them easily.
But the original white Zetsu wins. During the Kage Summit his spore Technique completely immobilized both Mifune and Chojuro, who have similar movesets with Hidan.
