The only way to defeat Hidan is by incapacitating him by cutting off his limbs or by sealing him. Hiruzen doesn't have any jutsus that could incapacitate Hidan, Asuma needed a fuuton enhanced chakra blade just to decapitate Hidan moreover all of his elemental jutsus can be tanked.
It was also noted by Asuma that pinpoints attacks were useless against Hidan due to his excellent evasive skills, Asuma with a speed of 4.5 wasn't able to land a hit on Hidan even with Shikamaru's assistance, Hiruzen only has 3 in speed.
Hiruzen's stamina is quite mediocre because of his old age as stated by the Anbu guy himself, on the other hand Hidan has never shown any sign of exhaustion and he has 5/5 in stamina in the DB. He won't have trouble outlasting him due to his immortality.
Hiruzen has RDS but since he has no intel on Hidan he will most likely die before he gets to pull it off or figure out his ritual. Hiruzen would die too anyhow.
Engaging Hidan in taijutsu would be suicide , he just needs a drop of his blood to win.
My vote goes to Hidan.
