Plus katsuyu can prevent him from doing the ritual. He needs to stand still in a circle for it to be able to work. Acid slime will make him have to move constantly.

if hidan starts widely stabbing himself after setting up the ritual she will be pinned to the ground. she isnt walking if he stabs his leg(thus stabbing hers) yes she will regen it but if he does it again and again she will not be able to walk. just like if he ripped the muscles in her arm so that she couldnt move her left arm, it will regen and if he does it again she wont be able to move her arm until it regens again.

again sakura has never summoned her for combat so she wont know but lets say she does. katsuya covers the field with acid seperating hidan and sakura. sakura now cant reach hidan because there is acid infront of her and hidan can safely make the seal from a safe distance and strike her

First off the turtle is worthless in a fight and second she will summon katsuyu. She is a boss summon who can serve multiple purposes on the battlefield.
