Any fuuton user could just ripo of his head at a distance.
A doton user could defeat him too, by making his own body like rock and smashing Hidan.
Suigetsu can kill him, normal weapons (with no raiton infused) can't hit Suigetsu, so Hidan weapon wouldn't hit him.
Kamui from Kakashi and he would be dead.
Tobi would teleport him.
Danzo would kill him with his Fuuton jutsus.
Aburame guys would suck of his chakra with their bugs.
Konan would paper cut him.
Deidara blow his head off.
Naruto would talk no jutsu on him and de-convert him from his religion, loosing the immortality power, or just would Kage Bunshin, and gang bang him.
Any Kage would kill him, maybe except Tsunade.
Nagato could kill him.
Kankurou uses puppets, so no use in getting his blood.
Etc, etc. Hidan can be easily defeated by someone that thinks or use long-range fighting.
Even Rock Lee/Neji (taijutsu guys) would defeat him

I said those name because unlike Hidan who just has a scythe, they have a wide array of deadly moves. Naruto=Main Character. Deidara: Long Range bomber. He still wouldn't stand a chance with people who are just plain better than him, even if he was smarter.

Here's the thing any two shinobi meeting for the first time, without either knowing anything about the other is already sort of fighting blind. That's not to say that while fighting shinobi couldn't get information on their opponent and figure out his/her fighting style. It's all a matter of fighting smart and having enough skill to back it up. If anybody fough against any of the Akatsuki members for the first time, they would be caught off guard buy most of their jutsu (half of the damn organization is immortal wtf; Sasori, Hidan, Kakuzu, Orochimaru[although he was only for a short part], and Madara). Kakashi's way of fighting "find out what you can through a clone and then attack head on" is a good method for finding out techniques although through somebody like Hidan his method wouldn't work. Hidan's jutsu is useful but the fact is if he were up against shinobi faster then him he couldn't use his technique, also for his jutsu to work he needs to stand still, one on one I'm sure his opponent no matter who they are is just going to stand around while he makes some voodo blood circle licks your blood and turn into a skeleton. That would be a red flag to K.O the mother F***er then and there lol
