IMO, Hidan is the reason they beat Kisame and Bee. Hidan can try and blitz Kisame from the beginning, preventing Kisame from weaving signs, and from there Kakuzu gg's with a long-distance elemental attack. As for Bee, going full Hachibi is actually disadvantageous because he becomes a huge target, and it's easy for Hidan to get blood from that point on.

Good sir, you are greatly underestimating Hidan and Kakuzu's teamwork...
Hidan doesn't need to blitz Kisame. He just needs to force Kisame to block his scythe with Samehada, and while his hands are occupied and cannot weave signs, Kakuzu can use Fire, Wind, or Lightning attacks to kill Kisame, or at least injure him. While Kisame is getting healed by Samehada, Hidan can cut him and prepare his curse. Or Kakuzu can make his threads go underground and surprise Kisame with an attack from below ground, immobilizing him. There are honestly so many ways for Kakuzu to beat Kisame, even if Kisame spits out his water dome Kakuzu can still win.

About Bee - I just looked back to the scans of the Taka vs. Bee fight and noticed the tentacles don't have blood. In that case, Bee wins.

To be frank, it was debatable for Hebi Sasuke to defeat Kakuzu just by himself. I don't think he can handle Hidan and Kakuzu at the same time. He will need Kirin for this job.
