IMO: I believe Hiashi wins against Fugaku and would pull out the win against Itachi too under these restrictions of course. Itachi still may upperhand at Hiashi with crow no jutsu and powerfull genjutsu. However Itachi's stamina would be his downfall.

Well this could be true, but I asked you about Itachi's feats being restricted to Sasuke vs Itachi battle. Could all the litte feats he has shown be enough to beat Hiashi who has all the feats in manga ?

I know having nerfed character against not nerfed is not fair, but that just shows Itachi unrestrcited would be much supperior, but could he still wins under these restrictions ? I am curious

This is a hard one. The Uchiha Clan was highly feared and respected and it was assumed that a Civil War between the Uchiha and Konoha could trigger a Civil War, so the Uchiha were very powerful. There were also a select few that awakened the Sharingan and Fugaku was the leader, so likely the strongest of the group, so with only a small group of Uchiha being able to trigger a World War to me, implies that Fugaku was very powerful.

Fugaku could defeat Hiashi though the War Arc Power Scaling shifts it in Hiashi's favor.

Itachi does defeat Hiashi though.

How does Hiashi counter genjutsu? Inb4 fighting with his eyes closed, where he can't see kunais for example, and he would get soloed by the most lame tool in naruto.

-Itachi is a lot faster than hiashi, and tricks him with a clone feint then ambush him
-Hiashi can't counter genjutsu

This is a very used argument for the Hyuugas. So explain or just accept its a fodder argument like all you give.

-Hiashi closes his eyes to avoid eye contact, that way he can fight guiding himself from just chakra vision to locate Itachi, and he avouds genjutsu

-If by this mean Haiashi can avoid seeing Itachi's eyes, then he can't see Kunais and other stuff either. He just has chakra vision like this.

You can't pick what he sees and what he doesn't see. If he doesn't see itachi's eyes, then he doesn't see the kunais either.
