Goku's body is strong but his mind is vulnerable. A genjutsu master like Itachi would stop Goku in his tracks before he gets powered or warmed up to even start fighting. Goku isn't invincible.

This is why it's stupid to do crossovers, why would he have a defense when there are no "genjutsu users" in DBZ anyways? And besides with info Goku can kill him before Itachi knows it. No, Itachi with info would know that match is suicide.
