I agree Sasuke will most likely win but Hidan is definitely underrated. If Sasuke doesn't win with one of those "initial blitz" thing-a-ma-bobbers then if the fight goes on long enough Hidan will get 1 hit in and Sasuke will lose.
Kakashi's taijutsu was on Hidan's level pretty much , and they were about equal. Same with Asuma, Hidan even managed to get the upper hand against him, it was thanks to Shikamaru that Asuma decapitated him(also thanks to him that he was hit in the first place though). Sasuke's taijutsu was lacking, when Team 7 had a reunion after Sasuke fought at the 5 kage summit, Kakashi still had the upper hand in taijutsu and got the first hit so that says something.
Keep in mind this is the Sasuke who fought Deidara and he can still turn into CS2. Katon:Goryuuka should also be effective but why single out one of Sasuke's techniques which could be useful.
Sasuke deduced Izanagi, if the fight goes on and Hidan gets blood, if he figures it out it might be too late, but Sasuke won't just stand there and let him smear the ground to make his ritual then stab himself. If Hidan is too focused on that he's going to die.
Sasuke should in theory be able to shunshin and blitz Hidan from the start via Chidori Eisou, or paralyze him with Nagashi or the like, but Hidan isn't in Akatsuki for no reason and should be able to avoid one of the 'initial blitz'. So it could go either way. As much as I want to say "Sasuke decapitates GG" It's definitely not that simple.
