Itachi can simply play defensive against Minato since he's one of the most intelligent user, one of the best Shuriken/Kunai user and one of the best observation skills, all 3 counters Minato's fighting style perfectly.

I think Minato would sniper itachi with his rasengan, if not he would be sealed pretty quik
