A part of it is canon. The ramen scene and the beginning is canon. It was in I think the first databook.

i absolutely love all the fillers about the previous generations past.

Itachi, Kakashi, Guy, Obito etc...imo that should be a new series. instead of sequels and the new generation(**** them) lets go back in time where there are still ninjas...

Only the flash backs are filler, some are canon. Although fillers got Gai being a Lee clone or Lee a Gai clone. Who knew Gai couldn't use ninjutsu, genjutsu, etc like Lee or was this said in manga before?
