Vinland saga, vagabond, the breaker and its sequel, and D gray man are the ones that come to mind.
VS is about a Viking that wants revenge. Its my third favorite manga, its a monthly so the breaker beats it for that reason.
Vagabond is about a wandering ronin that gets stronger. Physically and mentally.
The breaker is about a bullied kid who gets trained by a badass. Shit happens along the way.
Dgm, I'm pretty sure you had to have heard of this. Its awesome, but it was cancelled for unknown reasons.

Dgm is the only one with an anime, vagabond might have one.
