I noticed that the juubi's forms are becoming more huminoid

I looked it up so wanst sure if it had been adressed but isnt the gedo mazo its final form? In previous siloutes it has only been shown as its initial form, but the gedo mazo was its body, so wont it just turn into that form? Ten eyes and such, it seems likely to me.

I agree, there is a sense of humanization when you place it through the rebirth and transformation. In addition to the ear, notice the rib-cage that the Juubi has!

No, the Gedo Mazo was stated to be the "empty" body of the ten tails. Why would it's final form be it's empty body? The gedo mazo is what was left over after rikudo sennin stripped the juubi of it's chakra. Then he trapped the gedo mazo in the moon, but madara was able to break the seal and summon it back to earth with the rinnegan.

When Rikudou fought it I would assume it would be in its final form after roaming the earth prior to the fight. It is its empty body, so I would asume it's spike things on its back would be complete and maybe a few other differences but besides that I figured it made since.
