Your scaling is completely wrong. The head itself can have Buijuu's or Summonings jump on top of it as a platform. Thats how big it is. Its flesh it going to be more mass then the sword so no it will take a couple of stab wounds to get to the skull.

Manda II's head is much larger then that of Kurama's. Furthermore, Manda can easily wrap his body around Gambunta, if its Manda, he will have a chance to eat Bunta, if its Manda II, it will borderline crush Gambunta.
