I realize that Gai can fight by looking at Itachi's feet and following his movements, instead of his eyes but that leaves him vulnerable to amaterasu and everything else Itachi has in his arsenal bar genjutsu.

But if you are saying this due to Gai and the 8 gates, then yes he would defeat Itachi w/ that considering that he is about to fight Madara. But I don't view suicide techniques as a deciding factor. That's like saying Konan>Naruverse because of that paper bomb trap she attempted on Obito or Deidara and his C4 Karura>Naruverse because the explosion spans for kilometers. That's not right to say Gai>Itachi if Gai has to commit suicide to win. U_U
