The same can be said of Onoki. He can use rock clones which will be impervious to Gaara's sand attacks. Also Onoki in the air is very fast so I have no doubt he can avoid Gaara's attacks by speed or by jintoning the sand away. He could also make it extremely heavy thereby making it useless for Gaara to use.
Also jinton covers a huge radius and will destroy a lot of sand, sand clones and Gaara himself.
gaara turns rock to sand quote effortlessely,so rock clones would be actually hurtng onoki more than helping,not to mention gaara can still keep turning the rocks un their area to sand,therby reducing onoki's rock techs to a minimum,while increasing hi owns sand techs to a maximum. Onoki is fast in the air,but he needs to stand still to form and cast jinton,gaara's gourd sand is easily fast enoug to keep up with onoki in the air,not to mention gaara can use several streams of sand from different directions to attack him,onoki needs to actrually rouch the sand to make it heavy for gaara,who could easily kill him before he finishes,or just use another sand to attack.
Onoki needs to stand still,form jinton and fire it,muu,his teacher and an edo couldnt fully form jinton before gaara put himself between the two,and if disturbed while forming,they need to start over again,gaara can easily have his sand clones fly around onoki while he himself keeps him occupied and unable to use jinton as he would need to stay still,and the clones can ambuch him from behind,sand sensing will give gaara knowledge on any rock clones or any surprise attacks and any other details of any other thing around whether with a chakra signature or not as seen with muu,this will enable him keep his eyes on onoki while having his sand clones turn any rock clones/golems to sand and then use it to attack onoki. Gaara has far more chakra and can spam clones and sand waves far more than onoki can use his own techs.

dont mean nay disrespect,but i really dont see any of these two winning with low/easy diff against eachother,and gaara dosent need to dodge it,he can easily stop onoki from forming jinton as the weaknesses have been stated here already.

actually,i think it's the other way around,gaara can attack from multiple directions simultaneously,onoki needs to touch the sand he is weighing down,he wont be able to get near gaara to touch his gourd sand,and he wont be fast enough to weigh down all the sand coming from all directions all at once.
Onoki needs to stay still to form jinton,and gaara was able to get in beteween onoki and muu before muu could form his jinton despite being a distance out,so gaara could intercept onoki before he forms jinton,he also has his lightened sand now which means even faster sand+his ability to turn rock(which onoki uses) to sand instantly,sand sensing means onoki can't hide himself at all,gaara can easily create seveal sand clones to attack onoki from all directions.

I think you're overrating the importance of Gaara's sand speed just a tad here. Both Ōnoki and Gaara are Kage level shinobi, and generally when you reach that level it's very rare to see a "blitz" like the one you're describing here, unless you specialize in speed like A. If the Mizukage wasn't being continually blitzed by sand from all directions in desert setting, I don't see how someone with better speed and reaction feats like Ōnoki would be either.
Also, I'm of the opinion that Ōnoki can weigh just about anything down in the environment (mainly sand on the ground), but if you don't agree that's fine.

Good point about what Gaara did to Ōnoki and Mū, but there's one thing you're not taking into account: the fact that Mū wasn't expecting Gaara to interfere. This is a big misconception I see a lot, but an interception from an "outside" party during battle is not solid evidence of superior speed. Look at it this way. Say you come across two people fighting in the street and you decide to throw a rock a them, and it hits them. Does this mean you are faster then both them? No, it just means they weren't paying attention to you, and normally they could dodge that rock with ease if they were.
Don't get me wrong, I'm not trying to say Gaara's sand is slow: it's not. I just don't think it's so fast that Ōnoki will be unable to react to it.
And as for your point about clones, don't forget that Ōnoki can form his own like he did against Mū.
