I know this is an unpopular opinion, but I really think Gaara is potentially the best sensor in the manga.
Unlike other sensors, he uses contact sensing with his sand which is able to detect even completely invisible objects, like the 2nd Mizukage's clam, or Nagato's chamaleon, or Mu (I know Gaara didn't actually detect all of those but I'm just saying he could). He could just send thin waves of sand across the battlefield and detect any camouflaged or invisible objects. The reason why I think Gaara surpasses other sensors is that he could even find someone like Karin, who can shut off her chakra network to avoid detection.
Moreover, he has his Third Eye, which can see around corners and detect others even from a distance. He can send out his Third Eye sort of like a rover, to test the area and see what's going on (and possibly see through genjutsu?)
I think what makes him such a great sensor is that he uses physical means to detect a physical presence rather than sensing chakra or having visual abilities like Sharingan or Byakugan.
Some other underrated sensors are Shino and Kiba. They really can sniff out almost anyone.
