With Fifa Ultimate team you start out with Bronze players and as you win games and play more matches you get enough coins to buy and trade players. So basically you build your own team with any player you want to like.

I don't play FIFA, but they have an Ultimate Team like Madden. If it is the same then, you start out with a bunch of bad players (bronze,maybe silver) and as you win games you get more coins, and you can buy players or packs. You can also trade players and auction.
