depends on what category cause well i watched allot and out of fighting animes id say maybe HSDK lol, it has martial arts great comedy and im really sad cause they didn't make more episodes although the manga is still ongoing

Series wise I liked ninja scroll(yes it is a series as well) Bleach(some arcs better than others),Soul Eater has already been mentioned but its still pretty good. Dark Stalkers (theres a OVA havent watched it though.), I liked various series of Mega Man, and Some of the Transformers series too. (again japan has animated versions of the series we dont)
Oh and some of the Gundam Sereies too.
