Though technically not an opening it is ending?? from bleach Haruka kanata is epic and is used as opening for fan made Dragon ball Absalon.
Mushishi opening 1 - sore feet song, death note opening 1, durarara opening 1, seven deadly sins opening 2

I have yet to watch the 1999 version. I was told skip it and watch the 2011 version because it followed the story better and obviously has better animation.

Well you can just find the openings/endings on youtube. I liked opening 1 & 2 a lot (opening 2 of the 1999 version captured the YorkNew City arc vibe a lot better than the 2011 version did). I might watch the 1999 eng dub. version since I heard it was pretty good and the animation of it isn't that bad.
