Do the 2006 and 2010 series and the 2014/2015 series have the same story if not which should I watch?

Fate/ Zero is a prequel to these 3
Fate/Stay Night (2006)
Fate/ Stay Night Unlimited Blade Works (2014)
Fate/ Stay Night heavens feels (not yet aired)
All the Stay Nights are a different route. Its the same characters but different outcomes as the plots take different turns.
I'd say watch Fate/Zero first and then watch the other two Stay/Nights. Even though Stay/Night was created first Zero explains the properties and Laws of the verse so you won't be confused.

Its from a game.
Zero is a prequel to stay night.
So stay night ('06) is actually just one way to end that game.
Stay night unlimited blade works ('14) is another route the player can end the series.
As well as the stay night: heaven's feel (TBA)

All those series are based on the Fate Stay Night visual novel. The visual novel has 3 routes: Fate, Unlimited Blade Works and Heaven's Feel.
The 2006 anime was supposed to be an adaptation of the Fate route, but had elements from the other 2 routes as well.
The 2010 anime was a poorly made movie adaptation of the Unlimited Blade Works route. Do not watch it.
The 2014/2015 anime is another adaption of the Unlimited Blade Works route.
The Heaven's Feel route is going to get a movie adaptation.
Imo you should just play the visual novel. If you do, make sure to play it in this order: Fate -> UBW -> HF
If you don't want to play the VN, you should start with the 2006 anime, then watch the 2014 anime and then wait for the Heaven's Feel movie release.
