The Byakugan has a small blind spot near the behind of the neck. (Read Kidomaru VS Neji Part 1 fight for reference). Sakura perhaps knew this and attacked Kaguya in her blind spot. Kaguya sensed her chakra (That's why the exclamation mark) but because of her fast movement speed, she was not able to react in time.

She was too focus on Naurto and Sasuke.
I think that would be her blind spot as well but by the time she noticed Sakura was attacking it was too late to react.

she thought sakura's punch was fodder type and ignored it.saskue and naruto hits is fatal, so she concentrated on avoiding that
It is near the blind spot area, so Kaguya's visibility would still be hindered especially since she was looking downwards.
Kaguya was rushing upwards at Top Speed whereas Sakura was coming downwards at top speed because of Gravity and enhancement by Kakashi's Susanoo cloak.
The two speed directions when combined would give a frightening speed output making it impossible for Kaguya to react against her. Also, Kaguya has not shown superior reflex skills on the level of Obito and Madara.

Well do you remember how BZ got close to madara even tho he had 4 limbos guarding him from all sides?yeah this the same thing, and it's called "plot"...........
Well, Madara considered Black Zetsu a part of him, i.e; his will, so Madara was not on guard at all. He perhaps might have thought that Black Zetsu would defend him against attacks from the back. It's kinda like how characters are off guard with thier Shadow Clones.
Black Zetsu was in very close proximity to Madara and when Black Zetsu stabbed Madara, he gave a very shocked expression showing that he had clearly not expected it.
There is no "Plot No Jutsu" applied here, you just need to pay more attention to the panels to figure it out.

she saw her she just couldn't react. she's not a battle hardened veteran like madara or hell the other hyuga she's only ever fought 2 ppl and it was at once and she lost

She was moving too fast at that point to change direction as her focus was to avoid being tagged by Naruto and Sasuke, even if she saw Sakura with the Byakugan.
1) Plot: Since her eyes should've seen Sakura regardless of the small blind spot, since Kakashi attacked her straight on like 2 pages earlier with Sakura right by him.
2) Kaguya on focused on those with rikudo chakra, and those without it were not seen as a threat and ignored.
