When Hiruzen was the sensei of the Sannins, he was already the 3rd Hokage. So you can imagine that he couldn't go in mission with his three student.
In my opinon the one who supervised the young sannins when they went in mission, was Enma the Monkey King.
First, Enma is officially a Shinobi of Konoha, like some animal like Pakku (Kakashi's dog), that is why he has Konoha headband.
Then, Enma is as smart as human, there is no significative difference between Enma and other humans, except his body. So he can lead a team.
And Enma is enough skillfull to supervize gennins, his Taijutsu is very strong and he can use some jutsu like Kage Bunshin (in order to protect Hiruzen with a cage).
+ When Hiruzen summoned Enma, Orochimaru reacted like he knew him well, and Orochimaru showed that he was disgusted by Enma, it means in my theory that back in the time, Orochimaru never appreciated Enma as Team leader, probably because Enma is harsh.
And when the Sannins became enough old and experimented, Hiruzen let them going alone in missions, especially Tsunade and Orochimaru who were precocious.
When Hiruzen had time, he could train them and give them advices.
Hiruzen applied the same model he was during his youth, when Hashirama and Tobirama were both his teachers. Hashirama was the 1st Hokage, and Tobirama wasn't still Hokage, so we can imagine that Tobirama was the main teacher, the one who supervized Hiruzen and the two elders, and Hashirama trained them only when he had time to do it.
