Also like we've seen with Kabuto or Naruto, SM help to predict attack even better than Sharingan, so that they could even avoid fast attacks like Susanoo arrows. So Jiraya could do that too. He is fast enough. Just see how fast he blew away one Pain without the others even knew what's going on. For Amaterasu he can do the same or protect himself with his hair style technic or Amaterasu seal he did in part1. In ninjutsu he is far superior to Sasuke, he is extremly cautious when he fight, and he has much more experience.
