Elemental Kekkei Genkai

We know that everyone has an affinity to 1 element like lightning for kakashi and wind for naruto.
But there are those with elemental kekkei genkai who have an affinity for 2 elements.
Mei Terumi has an affinity for 3 elements namely Fire, Water and earth.
So if she can combine Fire and water to form boil release, Fire and Earth to form Lava Release, Why cant she combine Earth and Water to form wood??

Some Kekkei Genkais, such as Magnetism Release, are not unique to their villages. Magnetism Release is present in Suna and Kumo. Another example is Lava Release, it is present in Iwa and Kiri. Mokuton is unique to Konoha, only the 1st and maybe a couple other Senjus could use it.

cause if you mix earth and water you would get mud

That's what makes a Kekkei Genkai so special, in their blood is what allows the mixture of two elements to make a new one. She only has the DNA to conjoin Earth+Fire and Water+Fire. This means that in her blood there is DNA that allows these "new elements" to be created. What she lacks is another piece of DNA that would allow her to create a third "new element" (Mokuton). BECAUSE of the lack of DNA she lacks the ability to use this new element or aka wood release and this means that she doesn't have the blood in her to mix earth and water simultaneously to make way for Mokuton.
