I think Yamamoto's hand to hand is strong enough to break through Susano'o's armour as can be seen from these two pictures.

Although I can't be 100% sure, it's likely that Yamamoto's speed would hard to trace even with the Sharingan as both Jūshirō Ukitake and Shunsui Kyōraku who are very efficient of using Shunpo which is "a movement technique that allows the user to move faster than the eye can follow. The focal point that determines the basis of this technique is speed. As speed is the main point of the technique the method is best characterized by how fast one can get from point A to point B in the least amount of steps. Whether the Sharingan is able to keep up with movements such as these is also something I cannot say with 100% certainty.
