Edo tensei brings back the summoned person as they were when they died

and we know you can modify that if you use the right methods ie madara

but sasori died as a piece of living flesh

kabuto only mention he modified one edo that being madara's

so how does sasori's edo have a body?

Because he resurrected the body Sasori destroyed when he turned himself into a puppet. He still had a body.

Sasori died a natural death when he changed his body into a puppet.
his consciousness was what was left in the puppet but technically sasori was dead and was brought back how he was prior to being turned into a puppet
